Recipe - Lemon Coconut Bliss Balls
Ingredients:
1 cup desiccated coconut
Juice and zest of 1 large lemon
1 heaps tbs coconut oil
1 cup mixed seeds (I used pepitas and sunflower seeds)
6 chopped dates
Method:
Place all ingredients in a food processor and blitz until a fine, crumbly consistency forms.
Roll heaped tablespoon of mixture into balls, and coat with extra desiccated coconut
Place in fridge for at least 3 hours to firm-up before eating
Keep in fridge for up to 1 week (I assure you that you will devour these much faster!)
