Recipe - Lemon Coconut Bliss Balls

Ingredients:

  • 1 cup desiccated coconut

  • Juice and zest of 1 large lemon

  • 1 heaps tbs coconut oil

  • 1 cup mixed seeds (I used pepitas and sunflower seeds)

  • 6 chopped dates

Method:

  • Place all ingredients in a food processor and blitz until a fine, crumbly consistency forms.

  • Roll heaped tablespoon of mixture into balls, and coat with extra desiccated coconut

  • Place in fridge for at least 3 hours to firm-up before eating

  • Keep in fridge for up to 1 week (I assure you that you will devour these much faster!)
