Vegetarian San Choi Bau

Try this delicious vegan alternative to a Chinese classic.

Ingredients:

  • 1 onion - diced

  • 6 cloves of garlic -minced

  • 2 thumbs of ginger - finely grated

  • 250g mushrooms - finely chopped

  • 2 carrots - diced

  • 250g semi firm tofu - crumbled

  • 1 can water chestnuts

  • 1 cup coriander - finely chopped

  • 1 iceberg lettuce - separated into lettuce cups

  • 1/3 cup soy sauce/ tamari (add extra according to taste) mixed with 1 heaped Tbs honey

  • 2 Tbs sesame oil

  • Hoy sin sauce (optional)

Method:

  • Heat olive oil in a large fry pan or wok on medium-high heat

  • Add onion and fry until translucent (around 3 minutes)

  • Add garlic and ginger and fry for 1 minute

  • Add mushrooms and carrots and cook until vegetables soften (around 5-8 minutes)

  • Add tofu and fry for 2 minutes

  • Add soy sauce mixture and sesame oil and mix thoroughly

  • Turn off heat and add water chestnuts and coriander.

  • Divide mixture between lettuce cups and top with hoi sin sauce (optional)

  • Eat with your hands and enjoy!
